Espresso Gelatin Parfait

Deliciously light, melt in your mouth coffee goodness doesn’t get much better than this. These elegant parfait desserts take almost no time to make, and are so very kind to your weight loss efforts. Take the calorie count even lower by reducing the amount of sugar used – or swap it out for your favorite sugar substitute. With a dollop of unsweetened whipped cream on top, a 4 oz. serving tops the scales at less than 100 calories. Leave out the cream and substitute Stevia for sugar and you’ve got a deliciously rich dessert with fewer than 20 calories per serving.

Ingredients:

    1 packet Knox unflavored gelatin

    ½ cup brewed espresso or coffee, cooled

    1 1/2 cups (16 oz) brewed espresso or strong drip coffee, hot

    ¼ cup sugar (or sugar substitute)

    ½ cup light whipping cream

    Sprinkle gelatin on cooled coffee and let it sit 10 minutes to soften.

    Stir in hot espresso or coffee and stir until gelatin is completely dissolved.

    Add sugar if desired, and stir to dissolve.

    Pour one half of the mixture into a flat pan and place it in the refrigerator to chill.

    Whip the remaining cup of gelatin until it is light and frothy. Pour it into a baking pan and chill until set.

    Cut the two pans of gelatin into 1-inch cubes.

    Layer plain coffee and whipped coffee squares in parfait glasses.

    Top with a tablespoon of whipped, unsweetened, fresh light whipping cream.
